Let me tell you a little about my favorite dish!
It is super easy to make and super healthy for you and really fills you up, I just made it for the second time this week because I love it so much, and I am honestly bored with my food selection currently but what can you do? Make your favorite dish twice, that’s what. I know some people have a hard time getting used to healthy food, especially quinoa, I know it took me a while because the texture is different and your taste buds are not used to healthy food. So when I was on my way of finding food/recipes of healthy things on Pinterest, this recipe came up a lot so I figured, why the hell not? I tried it during my second year at my college I believe and I was so hooked ever since. I also think I tried to have my parents try it when I was home one time, I don’t remember. But I do remember when I had them tried quinoa for the first time and it was kind of funny and I appreciated their effort to try it, and my step-dad said, “It looks like fish eggs.” Hahaha, he did not like it obviously and I think my mom said she could get used to it. Now that I am used to eating quinoa, I don’t think I can go without it because it is so good if you cook it right, or make a kick-ass recipe with it.
Now, when I first got the ingredients for it this past week, I accidentally grabbed “green enchilada sauce” instead of the red sauce that the recipe calls for, and let me tell you, there was a definite difference. I guess if you like the green enchilada sauce I say go for it, but I like the red. So the next time I went to the store I got the red sauce and made it the right way and loved it the second time around, with the correct sauce.
